The kalamata olives,artichoke hearts and goat cheese bring the glam and the English muffins keep the calorie count low on these delicious mini pizzas.
- 2 tbsp basil pesto
- 2 whole wheat english muffins
- 4 tbsp goat cheese
- 2 tbsp chopped green or Kalamata Olives
- 4 jarred or canned artichokes hearts, quartered
Preheat the oven to 425Â°F. Divide the pesto among the four muffin halves, and then add the other three ingredients. Place the muffins on a baking sheet and bake for about 5 minutes, until the cheese is melted and the bottoms are slightly crisp.
