Ingredients:
- 1 butternut squash, peeled and cut int 3/4″ chunks
- 1 large red onion, peeled and cut into 1/2″ thick wedges
- 2 leeks, trimmed and cut in disks
- 1 tbs. olive oil
- Walnuts
- 2tsp. chopped fresh marjoram
Directions:
Heat oven to 425 degrees. In bowl, gently toss all ingredients. Season with salt and pepper, if desired.
Spread squash mixture in greased jelly-roll pan.
Bake 30 mins, or until squash is tender, stirring occasionally. Add walnuts.
Prep time: 15 mins. Total time: 45 mins.
