Many of us prepare a green bean casserole for Thanksgiving, but this dish can sometimes be high in calories.  So keep your favorite traditional meals and reduce calories with this tasty dish.

This is a recipe that is rich in flavor that you will love.  It is healthy and easy to prepare, a perfect side dish for everyday meals.

INGREDIENTS

  • 1lb fresh green beans
  • 2 cans reduced fat mushroom soup
  • ½ tsp salt (pepper to taste)
  • ¼ tsp paprika
  • 1 can OC Onions

( I think this is the brand OC onions, don’t use the cheaper ones, they don’t taste as good)
You can also prepare your own onions which is the healthiest way to go. See directions below*

COOKING DIRECTIONS

1) Blanch the green beans in one inch of water for 4-5 minutes, drain.
2) Mix green beans and mushroom soup in a bowl.
3) Divide into 10 ramekin cups, top with 1 ½ tbsp each of the onions.
4) Cover with foil and bake on 375 for 50 minutes or until top gets crispy.

This can also be made as a casserole and divided into plastic containers after baking.

*Prepare you own onions. Just slice some onions finely. Heat a cup of olive oil, add onions, lower the heat. Keep stirring. When the onions turn golden, turn the heat off. Take the onions off the pan and place them on a plate covered with paper towel. Let dry. Add to your green bean casserole. A green bean casserole doesn’t taste good without French friend onions.
