Ingredients:
- 1 lb. (16 oz.) fresh green beans
- 1/2 red pepper, seeded and sliced
- 1/4 cup sliced white onions
- 1 tbs. olive oil
- 1/4 cup olive oil vinaigrette
- 1/4 tsp. lemon zest
- 1/4 cup fresh bread crumbs, toasted
- 1 tbs. grated Parmesan cheese
- 2 tbs. sliced almonds, toasted
Recipe Directions:
In sauce pot of boiling salted water, cook green beans 4 mins. Drain and rinse in cold water.
In skillet, cook peppers and onions in olive oil 2 min. Add vinaigrette, lemon zest and beans. Cook 1 min. Arrange on platter.
Sprinkle with bread crumbs, cheese and almonds.
