Low Calorie high fiber Whole Wheat Pancakes

Calories per Servings: 205, total fat: 2.3 grams total protein: 7.7 grams, total carbs: 34.2 grams


  • 1 cup whole wheat flour*
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 egg, lightly beaten
  • 1 cup low-fat buttermilk
  • 2 tbsp equal
  • add some high fiber fruit such as; strawberries or blueberries
  • High fiber fruits will increase your daily grams of fiber increasing your weight loss.

*Make sure your buy “WHOLE WHEAT FLOUR”. The label should list “Whole Wheat Flour” not enriched wheat flour. Enriched wheat is not whole wheat and you will not get the same benefits.


Mix whole-wheat flour, baking powder, baking soda and salt in a medium bowl. In a small bowl, combine egg, buttermilk and sugar. Make a well in dry ingredients and stir in egg and buttermilk mixture. Preheat frying pan to medium-high heat. Scoop batter by 1/4 cupfuls on to pan. Cook until bubbles appear in the pancakes. Turn and cook for about 1-2 minutes more.

Makes 8 pancakes.

Make extra batter and freeze the pancakes, place them individually in plastic saran wrap, and then put them in a container. Take them out when you want a healthy breakfast on the go.  They freeze well and you can easy reheat them in a toaster.
