Low Calorie Yogurt Banana Breakfast Parfait Recipe

This is a tasty high fiber breakfast treat that you will love. You can also enjoy it as a snack, it is satisfying and delicious.

Ingredients:

  • 2 cups Greek 2% yogurt
  • 1 tbs. organic honey
  • 1 tsp. vanilla extract
  • 2 small bananas peeled sliced and divided
  • 1 cup fresh blueberries divided
  • 1/4 cup cinnamon flavored granola
  • 1 tbs unsalted peanuts
  • 1 tbs. dried cranberries
  • 1 strawberry sliced

Directions:

In bowl, combine Greek yogurt, honey and vanilla extract.  Stir in 1/2 bananas and 1/2 blueberries.  Divide yogurt mixture evenly among 4 serving dishes.  Top with granola, peanuts, cranberries, strawberries and remaining bananas and blueberries.  Garnish each dish with sprig of fresh mint, if desired.
