This is a tasty high fiber breakfast treat that you will love. You can also enjoy it as a snack, it is satisfying and delicious.
Ingredients:
- 2 cups Greek 2% yogurt
- 1 tbs. organic honey
- 1 tsp. vanilla extract
- 2 small bananas peeled sliced and divided
- 1 cup fresh blueberries divided
- 1/4 cup cinnamon flavored granola
- 1 tbs unsalted peanuts
- 1 tbs. dried cranberries
- 1 strawberry sliced
Directions:
In bowl, combine Greek yogurt, honey and vanilla extract. Stir in 1/2 bananas and 1/2 blueberries. Divide yogurt mixture evenly among 4 serving dishes. Top with granola, peanuts, cranberries, strawberries and remaining bananas and blueberries. Garnish each dish with sprig of fresh mint, if desired.
