This is delicious and the entire family will love it.<\/p>\n<p>Total Time: 30 minutes<br \/>\nServings: Makes 4 servings (1\/4 frittata each)<br \/>\ncalories: 106\u00a0\u00a0 total fat: 3g\u00a0 Protein: 15g.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1-1\/2\u00a0cups\u00a0Egg Beaters\u00ae Original (1-1\/2 cups = 12 oz)<\/li>\n<li>1\/2\u00a0cup\u00a0shredded reduced-fat Swiss cheese (1\/2 cup = 2 oz)<\/li>\n<li>1\/4\u00a0cup\u00a0fat free milk<\/li>\n<li>PAM\u00ae Original No-Stick Cooking Spray<\/li>\n<li>10\u00a0fresh asparagus spears, cut into 1-inch lengths<\/li>\n<li>1\u00a0small\u00a0onion, thinly sliced<\/li>\n<li>1\/4\u00a0teaspoon\u00a0salt<\/li>\n<li>1\/8\u00a0teaspoon\u00a0ground black pepper<\/li>\n<li>1\u00a0medium\u00a0tomato, coarsely chopped<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Preheat broiler. Mix Egg Beaters, cheese and milk in medium bowl until well blended; set aside.<\/p>\n<p>Spray medium skillet with ovenproof handle with cooking spray; heat over medium heat. Add asparagus, onions, salt and pepper; cook and stir 3 minutes, or until vegetables are crisp-tender. Add tomatoes; cook 1 minute, stirring occasionally. Add Egg Beaters mixture. Reduce heat to low; cover skillet with lid. Cook 12 minutes, or until bottom of frittata is set but top is still slightly moist. Remove lid from skillet.<\/p>\n<p>Place skillet under broiler. Broil 2 minutes, or until top is set but not browned.
