{"id":4936,"date":"2011-01-02T18:46:47","date_gmt":"2011-01-02T23:46:47","guid":{"rendered":"http:\/\/shrinkingtheplanet.com\/weighless\/?p=4936"},"modified":"2015-12-04T22:15:20","modified_gmt":"2015-12-05T03:15:20","slug":"low-calorie-quinoa-sweet-potato-mushrooms-recipe","status":"publish","type":"post","link":"https:\/\/shrinkingtheplanet.com\/weighless\/low-calorie-quinoa-sweet-potato-mushrooms-recipe\/","title":{"rendered":"Quinoa Sweet Potato &#038; Mushrooms"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><br \/>\n3 cups<br \/>\nquinoa (red and white mix)<br \/>\n6 cups water<br \/>\n1 whole<br \/>\nsweet potato, peeled &amp; diced into \u00bd inch cubes<br \/>\n1 half red onion, thinly sliced<br \/>\n1 tbsp garlic salt<br \/>\n1 tbsp olive oil<br \/>\n2 cups mushrooms (oyster or button)<br \/>\n1 tbsp rosemary, chopped<br \/>\n2 cups baby beet greens<br \/>\n8 oz chevre<br \/>\n<strong>Directions:<\/strong> Add water and quinoa to rice cooker and turn on. Quinoa is ready when water is fully evaporated. Coat sweet potatoes with half cup of balsamic dressing and 1 tbsp of garlic salt. Lay out on half of a sheet pan. Bake for 15 minutes at 400\u00b0F. Sweet potatoes should be browned and crispy. Mix onions and mushrooms with 2 tbsp of oil and rosemary. Saut\u00e9 in large skillet over medium fire for 10-12 minutes. Final mushrooms and onions should be crispy and darkened. Assemble cooked sweet potatoes, mushroom mixture into quinoa. Mix in goat cheese, garlic salt and 1 tbsp of olive oil.
