This delicious quinoa salad has a Mexican flavor with black beans, lime, cilantro and jalapeno. Servings: 4- 6<\/p>\n<p>ingredients:<\/p>\n<ul>\n<li>1 cup quinoa<\/li>\n<li>1 1\/2 cups cold water<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>2 cups cooked black beans. If using canned beans, drain and rinse well<\/li>\n<li>1\/2 cup chopped celery<\/li>\n<li>Optional: 1 carrot, peeled, halfed lengthwise, sliced thin diagonally<\/li>\n<li>1 jalapeno pepper, seeded and minced OR 1 Tbsp minced fresh ginger<\/li>\n<li>2 garlic cloves, minced, OR 1 tsp garlic powder<\/li>\n<li>1 red pepper, sliced thin<\/li>\n<li>1 green pepper, sliced thin<\/li>\n<li>1 tsp cumin powder<\/li>\n<li>1 tsp coriander powder<\/li>\n<li>2 Tbsp chopped fresh cilantro or basil<\/li>\n<li>1\/4 cup chopped scallions<\/li>\n<li>Optional: 1 large ripe tomato<\/li>\n<li>Optional: 1\/2 cup sliced olives<\/li>\n<\/ul>\n<p><strong>Dressing:<\/strong><\/p>\n<ul>\n<li>2 Tbsp freshly squeezed lime juice<\/li>\n<li>1\/4 cup olive oil<\/li>\n<li>1 tsp salt<\/li>\n<li>Fresh ground pepper<\/li>\n<li>Pinch cayenne or chili powder<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>The quinoa can be made ahead of time and refrigerated<\/li>\n<li>Soak the quinoa 1\/2 hour in cold water<\/li>\n<li>Rinse very thoroughly in water several times. For each rinse, pour off most of the water and finish draining through a large fine mesh strainer<\/li>\n<li>Place in 2 qt pot with 1 1\/2 c. water and 1\/2 tsp salt<\/li>\n<li>Bring to a boil, turn down to low, cover tightly, and cook for 15 minutes<\/li>\n<li>Remove from heat and allow to sit 5 minutes covered<\/li>\n<li>Fluff gently with a fork and set aside to cool<\/li>\n<li>Saut\u00e9 jalapeno, fresh garlic, in 2 Tbsp oil until garlic is browned, pepper and celery are softened<\/li>\n<li>Add the green and red peppers and saut\u00e9 briefly<\/li>\n<li>Add the cumin and coriander, cook and stir 5 minutes<\/li>\n<li>Blend dressing ingredients with a whisk or shake in a jar<\/li>\n<li>Gently combine saut\u00e9ed veggies, tomatoes, black beans, quinoa and dressing in a large bowl<\/li>\n<li>Adjust salt and pepper to taste.
