This dish is filled with fruits and vegetables, high in fiber, it is a heart healthy meal.<\/p>\n<p><strong>START TO FINISH:<\/strong> 35 minutes\u00a0<strong>MAKES:<\/strong> 6 servings<\/p>\n<p>Ingredients:<br \/>\n1 pound cooked chicken breast, cubed<br \/>\n2 Granny Smith apples, cored and chopped<br \/>\n1 cup chopped celery (2 stalks)<br \/>\n1\/2 cup chopped green onions<br \/>\n2 tablespoons chopped fresh flat-leaf parsley<br \/>\n1\/4 cup light dairy sour cream<br \/>\n1\/4 cup red wine vinegar<br \/>\n3 tablespoons mayonnaise or salad dressing<br \/>\n1\/2 teaspoon kosher salt<br \/>\n1\/4 teaspoon freshly ground black pepper<br \/>\n1\/4 cup chopped walnuts, toasted<br \/>\n6 cups torn mixed salad greens<\/p>\n<p>Instructions:<br \/>\nIn a large bowl combine chicken, apples, celery, green onions, and parsley. Stir in sour cream, red wine vinegar, mayonnaise, kosher salt, and pepper. Stir walnuts into chicken mixture.
