{"id":6139,"date":"2011-07-24T21:38:34","date_gmt":"2011-07-25T02:38:34","guid":{"rendered":"http:\/\/shrinkingtheplanet.com\/weighless\/?p=6139"},"modified":"2015-11-19T08:58:42","modified_gmt":"2015-11-19T13:58:42","slug":"low-calorie-quinoa-stuffed-peppers-recipe","status":"publish","type":"post","link":"https:\/\/shrinkingtheplanet.com\/weighless\/low-calorie-quinoa-stuffed-peppers-recipe\/","title":{"rendered":"Low Calorie Quinoa Stuffed Peppers"},"content":{"rendered":"<p>Ingredients:<\/p>\n<ul>\n<li>1 can (14-1\/2 ounces) vegetable broth<\/li>\n<li>1\/4 cup water 1 bay leaf<\/li>\n<li>1 cup quinoa, rinsed<\/li>\n<li>2 each medium sweet red, yellow and orange peppers<\/li>\n<li>4 medium carrots, finely chopped<\/li>\n<li>2 medium onions, finely chopped<\/li>\n<li>1 tablespoon canola oil<\/li>\n<li>2 tablespoons sunflower kernels<\/li>\n<li>2 teaspoons dried parsley flakes<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 teaspoon dried basil<\/li>\n<li>1\/2 teaspoon dried oregano<\/li>\n<li>1\/2 teaspoon paprika<\/li>\n<li>1\/8 teaspoon dried marjoram<\/li>\n<li>1\/8 teaspoon dried thyme Dash cayenne pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>In a small saucepan, bring the broth, water and bay leaf to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Discard bay leaf. Cut peppers in half lengthwise and discard seeds.<\/p>\n<p>In a large kettle, cook peppers in boiling water for 3-5 minutes or until crisp-tender.<\/p>\n<p>Drain and rinse in cold water; invert onto paper towels. In a large nonstick skillet, saute the carrots and onions in oil until tender. Add the quinoa, sunflower kernels and seasonings; cook and stir for 2 minutes or until heated through. Spoon into pepper halves.<\/p>\n<p>Place in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake, uncovered, at 350\u00b0 for 20-25 minutes or until peppers are tender.<\/p>\n<p>Yield: 6 servings.<\/p>\n<p>Nutritional Analysis: 2 stuffed pepper halves equals 221 calories, 6 g fat (1 g saturated fat), 0 cholesterol, 520 mg sodium, 38 g carbohydrate, 6 g fiber, 7 g protein.
