Having chicken instead of beef is a healthy meal choice and lower in calories so eat up and enjoy the summer.<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">1 lb cooked, shredded chicken<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">1\/2 cup barbeque sauce<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">1\/4 cup pineapple juice<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">4 1\/2\u2033-thick slices of pineapple<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">4 King\u2019s Hawaiian hamburger buns<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">coleslaw, optional (recipe below)<\/span><\/li>\n<\/ul>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Combine barbeque sauce and pineapple juice in a large saucepan and bring to a simmer. Add the shredded chicken, tossing to coat, and cover. Cook over low heat for about 20 minutes.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Meanwhile, heat a grill pan over high heat. Place the pineapple slices in the pan, and cook for a couple of minutes on each side, to slightly soften the pineapple and obtain grill marks. Remove from pan and set aside.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Split the burger buns in half, and lightly toast them in the grill pan.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Pile the barbequed chicken on the bun, topping with the grilled pineapple, and coleslaw if desired.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Source: adapted from So Tasty, So Yummy<\/span><\/li>\n<\/ul>\n<p>COLESLAW RECIPE<br \/>\n2 cups thinly shredded green cabbage<br \/>\n1 cup thinly shredded red cabbage<br \/>\n1 cup shredded carrots<br \/>\n1\/4 cup mayonnaise<br \/>\n1\/4 cup greek yogurt<br \/>\n2 tablespoons cider vinegar<br \/>\n1 tbsp honey<br \/>\n1 tsp kosher salt<br \/>\n1\/2 tsp ground black pepper<\/p>\n<p>In a large bowl, whisk together mayonnaise, greek yogurt, vinegar, and honey. Add in shredded cabbage, carrots, salt and pepper. Toss to combine.
